- Breading. To ensure an even crumb coating, here are the rules you must follow. First, you should always prepare a breading station. Take three shallow dishes and fill one each with flour, egg wash, and breadcrumbs. Start by drying the meat or fish with a paper towel to get rid of any extra moisture. After which, dredge in the flour and shake off the excess. Dip into the egg wash after, making sure that you let the extra drip off. Finally, press the meat or fish into the crumbs and coat it evenly. We suggest using panko breadcrumbs for extra crispness.
- Browning or Searing. Browning or searing creates a caramelized, golden crust that adds texture and enhances the flavor of meat or fish. The key to a properly seared meat is the use of a very hot pan. Ideally, you should use a pan that is made of stainless steel or anodized metal. These types of pan are known to conduct and distribute heat well and evenly. Add enough oil to lightly coat the surface. Ensure that it is hot enough to the point that it shimmers, but does not smoke. To sear you want to make sure you are only doing each side for a minute or 2, just enough to create a crust and seal in the juices.
- Dicing an Onion. Every aspiring chef should know how to dice an onion properly to save time and effort whenever a dish calls for the use of onions. A very important thing to take note of is that you must ensure that your chef’s knife is very sharp. We suggest using a stainless steel knife and a sharpening tool prior to any slicing or dicing. Also run the knife frequently under water. The water will help absorb the sulfur compounds and a sharp knife will make a cleaner cut. Also, do not trim both end off the onion before peeling and chopping, the sulfur compounds are more concentrated near the root.
